Ingredients:
- Butter 2 tbsp
- Onions (diced) 1 large
- Pumpkins (peeled & diced) 1 kg
- Green chillies 2 tsp
- Stock 1.25 litres
- Thyme 2 sprigs
- Salt & pepper (to taste)
- Cream 1 cup
- Garlic (chopped) 11/2tbsp
- Cream (for garnish) 1 cup
- Coriander powder 1/4 tsp
- Cumin powder 1/4tsp
- Red chilli powder 1/4 tsp
Recipe
- Sweat the peeled pumpkin along with the onions, red chillies, and fresh thyme in butter.
- Add the stock and cook till all the veggies are tender.
- Add the cream, season to taste.
- Blend to a smooth puree.
- Mix some cumin, coriander and red chilli powder, mix with cream and swirl it over the soup just before serving.
- Serve and enjoy the taste.
