Shahi paneer

 Ingredients:

       
  • Cottage cheese (paneer)     400 grams
  •  Onion ,quartered     2 large
  •  Oil     2 tablespoons
  • Cloves     3
  • Black peppercorns     4-5
  • Cinnamon     2 one inch sticks
  • Bay leaf     1
  • Green chillies,slit     2
  • Ginger paste     1 teaspoon
  • Garlic paste     1 teaspoon
  • Cashew nut paste     1/4 cup
  • Yogurt     1/2 cup
  • Cream     1/2 cup
  • Saffron (kesar)     a pinch
  • Garam masala powder     1/2 teaspoon
  • Salt     to taste
  • Green cardamom powder     1/4 teaspoon

How to prepare:

  • Cut the paneer into half inch wide and one inch long pieces. 
  • Boil the onions in quarter cup of water.
  • Drain and allow to cool. 
  • Grind to a fine paste.
  •  Heat the oil in a kadai, add the cloves, peppercorns, cinnamon and bay leaf and sauté till fragrant.
  • Add the green chillies and boiled onion paste and sauté for three to four minutes on low heat so it does not get colored. 
  • Add the ginger paste and garlic paste and continue to saute for half a minute. Add the cashew nut paste and saute for another two minutes. 
  • Add the yogurt and saute till the water from the yogurt gets absorbed.
  • Stir in the cream, saffron and garam masala powder and salt to taste. 
  • Add the paneer and stir gently to mix. 
  • Sprinkle green cardamom powder and serve hot.
  • And enjoy the taste.

Shahi paneer


 Ingredients:
  • 250 gm Paneer (cottage cheese)
  • 2 tsp Grated paneer 
  • 1 tsp Chopped coriander
  • 1/4 cup Beaten curd
  • 11/2 cup Milk
  • 1 1/2 cup tomatoes (chopped fine)
  • 1/2 cup Onion (chopped into strips)
  • 1/2" piece Ginger chopped fine
  • 2-3 Green chillies chopped fine
  • 2-3 Cardamoms (crushed)
  • 1/2 tsp Garam masala
  • 1/2 tsp Red chilli powder
  • 2 tsp Tomato sauce
  • 3 tsp Ghee or butter
  • Salt to taste  

For Garnish:
  • 2 tsp Grated paneer
  • 1 tsp Chopped coriander 


Recipe:

  1. Chop paneer into 2" fingers. 
  2. Heat half the ghee. 
  3.  Add onion, ginger, green chilli and cardamom.
  4. Fry for 3-4 minutes. 
  5. Add tomatoes and cook for 7-8 minutes, covered.
  6. Add curd and cook for 5 minutes. 
  7. Add 1/2 cup water and cool.
  8. Blend in a mixer till smooth.
  9. Heat remaining ghee, add gravy and other ingredients except milk and paneer.
  10. Boil to get a very thick gravy. 
  11. Just before serving, heat gravy, add milk and paneer fingers and boil for 3-4 minutes.
  12. Garnish with chopped coriander and grated paneer.  
  13. And enjoy the taste.
