Cuban Pumpkin soup


Ingredients:

  •     Butter 2 tbsp
  •     Onions (diced) 1 large
  •     Pumpkins (peeled & diced) 1 kg
  •     Green chillies 2 tsp
  •     Stock 1.25 litres
  •     Thyme 2 sprigs
  •     Salt & pepper (to taste)
  •     Cream 1 cup
  •     Garlic (chopped) 11/2tbsp
  •     Cream (for garnish) 1 cup
  •     Coriander powder 1/4 tsp
  •     Cumin powder 1/4tsp
  •     Red chilli powder 1/4 tsp

Recipe
  1. Sweat the peeled pumpkin along with the onions, red chillies, and fresh thyme in butter.
  2. Add the stock and cook till all the veggies are tender. 
  3. Add the cream, season to taste.
  4. Blend to a smooth puree.
  5. Mix some cumin, coriander and red chilli powder, mix with cream and swirl it over the soup just before serving. 
  6. Serve and enjoy the taste.
